Prepare Alaska fish sticks according to package directions; keep warm.
Cut flatbread in half crosswise to make 8 pieces. Spread one side of each flatbread with 2 tablespoons bruschetta. Place 4 fish sticks on each of 4 pieces of bread. Sprinkle 2 oz. of cheese over each fish sandwich. Top with remaining bread slices, bruschetta side down. Grill 4 to 5 minutes in panini press or on griddle until cheese is melted and sandwich is hot throughout.
